How do you know when a brake shop actually knows what they’re doing?

Just moved to Dubai from the UK a few months ago and brought my Audi A4 with me. I’m due for a front pad replacement soon and honestly I’m a bit overwhelmed by all the options here. Back home I had a regular mechanic I trusted for years, but starting from scratch in a new city is stressful because I can’t tell which garages are legit and which ones will cut corners. I’ve been reading through forums and noticed people mention the Dubai Trusted Brake Pad Experts quite a bit, but I’m still not sure what specific questions I should ask when I call a shop. Like, should I ask what brand pads they use? Do they always replace the wear sensor or only if it’s triggered? And is it normal here to ask to see the old parts afterwards without offending them? I don’t want to come across as a difficult customer, but I also don’t want to get ripped off just because I have a European plate. Any tips on what red flags to look out for would be really helpful.
